The thing that looks like a rotary knob is in fact a rubber push bulb with a water in let pipe and a water out let pipe on the back. Sorry, it's been "p*ssing" with rain here and I didn't feel like opening the doors on Lurch and letting allthe water in if I didn't have to. I will take a couple of photos tomorrow as the wether is supposed to be better.

I'll take a photo of the one in Lurch (1973 LWB) when it's daylight and I can move all the "crap" covering it up. Basically it is a soft plastic bag fixed just the other side from the screen washer nozzels and the water is fed to the nozzels by pushing on a rubber "button / bulb"...

My mistake, I made an assumption that you were putting your dolly under the main propshaft tube rather than holding up the Axle arms! Should work well. Well done on the good idea for making up a trolley for the main tube to sit on, only issue I can see is that because hte tube is ruond and your brackets match that. What is to stop the tube rotating and ending up at some skew angle? The other two wheels? Don't forget they are on springs and dampers ...

Have you checked, changed the main & idle jets? They can wear just throught the amount and speed of fuel going through them. The problem with a lot of haflingers is that they do not charge at 750rpm so most will have higher idle settings to the point where the charge light just goes out. It take...

Lurch needs the choke when it's cold, but I can't say what the temperature is at that point as it's not something I have ever thought about. I just use the choke when I think it is cold enough to need it or the engine doesn't start with out it. On a long road drive I get near if not actually the 30 ...

You could use Water pipe to make some bows for the back to hold a cravan type cover up so it does not let the water pool in the back.
